Step 1: Make Dhokla Recipe At Home With Simple Ingredients
I have two and a half cups of beson also known as gram flour. I have some curry leaves with me. I have some fresh coriander leaves with me this is for garnishing. Some green chillies around three of them.
Then I have one tablespoon of salt, one tablespoon of baking powder, 1 by 4 teaspoon of baking soda, 2 tablespoon of sugar. I have extracted lime juice from one lime and I have some water with me.
This I use for my batter preparation and as well as for my sugar syrup preparation, I have a tray with me.
I greased this tray with some cooking oil. I’ll be using half a tablespoon oil for greasing my tray and around 2 tbsp for making the sugar syrup. So let me quickly tell you the next step for making the Dhokla.
Step 2: How To Make Soft Khaman Dhokla
Transfer the turmeric and salt and lemon juice into the mixture. Just a pinch of turmeric to looks more yellowish.
Add tablespoon of salt. Start adding little water and make a smooth batter, not very runny not very thick. If your batter is very thick your Dhokla will not fluff enough.
Now we’ll see the smooth batter is ready at a rate of pouring consistency. Let’s keep it aside for 30 odd minutes and then let’s get started.
I am using some mustard seeds. Add four spoons of olive oil or refined oil allow to cook your mustard seeds and once the mustard seeds are done, we’ll add in our curry leaves.
Till they are little brown in color and then we’ll add our water. When curry leaves are cooked now add in around 2 cups of water into a boil, then we’ll add sugar and green chili.
When your syrup is ready just squeeze in little lemon juice and it’s entirely done. Now let’s keep it aside and focus on Dhokla.
To grease your tray add one tablespoon of oil into it. Now with the help of your hands just grease it properly from all the sides and then we’ll invert our Dhokla mixture in it.
Time to add in the baking powder and the pinch of baking soda into the batter. That I told you to keep aside.
Now transfer this mixture in your greased tray. Just add it carefully. Now keep your steam medium flame for 20 to 25 minutes. So after 20 to 25 minutes our Dhokla is ready.
Allow it to cool for around 15 minutes then we’ll cut our Dhokla in the desired shape. Now Dhokla has cooled down. With the help of a knife carefully remove it from the sides.
Step 3: Prepare the tampering. Make Dhokla more beautiful!
Our Dhokla is perfect, now it’s time to cut this Dhokla into the desired shape. Now add sugar syrup with some coriander leaves in the Dhokla.
And give this Dhokla in your refrigerator for around 59 minutes.
If you like spices, you can add some chopped green chilies to the top cover of dhokla.
You can also make a dhokla sandwich by layer and add the sauce of your choice.
Step 4: Serve moist dhokla with fafda and jilapi
Turn off the heat and pour the dhokla tampering and sprinkle the coconut powder on top of the dish. Now transfer the dough to a serving bowl. Dhokla taste will be further enhanced when you add chutney or jilapi to it.

Some extra tips for making dhokla recipe
- Beat dhokla a few times to get it to air. This will make Dhokla limper. Do this before baking soda or fruit salt.
- If the dhokla bata becomes foamy, do not shake it anymore. Try to keep it thick all the time.
- Always use Eno when making Dhokla. If you do not have eno at home, you can use baking soda or lemon juice.
- Dhokla is always dry because it is made from gram flour, which contains a lot of protein. As a result, when it is mixed with water, it dries up.
- Let the steamer heat for at least 5 to 10 minutes before placing the dough paste on the plate. Otherwise, it may take longer to cook.
